I got this recipe from the site of instructable by itsallaroundyou(credits to itsallaroundyou). You should read her/his post because I found this recipe very interesting and easy to follow. I won’t give you the exact measurement of the recipe coz I just followed based on my taste and I improved my chocolate according to my taste. And everything you read now is adjusted.
If you are going to make your own chocolate bars from cacao beans make sure you taste it to suit your taste. So here are the ingredients and materials needed.
Ingredients:
- Sugar
- Cacao beans
- Coconut oil
- Salt (optional)
Tools needed:
- Coffee Grinder or Food Processor (I used Blender & grinder for biscuits)
- Cooking pan (for roasting)
- Oven (Optional)
- Bowls
- Spatula
- Spoon
- Blower or Fan (optional)
- Rolling pin or mortar
- Tray/candy molder
I did not include the other tools that are listed from the site coz I adjusted it according to the things that I already have at home.
According to itsallaroundyou:
If you want your chocolate to be 70% dark chocolate, take the weight of the cocoa liquor (grams) and divide the number by 70. Take the result number and multiply that by 30 (this is the grams of sugar).
From Cacao Beans to Chocolate |
Here is how:
- Roast the cacao beans until you smell the aroma (to my experience, it smells like raw coffee) approximately 30 minutes. Continue roasting cacao beans, see the photo above.
- Let it cool and peel the shell of cacao beans or if you have a blower use it to remove those shells.
- After removing the shells then crack them. Bring it to your grinder. You should pulverize it to have a smooth and a perfect consistency.
- Pulverize sugar using the grinder.
- Now, add coconut oil and blend it using a blender.
- Then add powdered sugar until it becomes smooth and a little bit thick (make sure that there are no lumps).
- Now, pour it in your favorite candy molder or a tray like what I did. Then draw a line to make it easier for you to cut it after.
- Place it in the fridge until it becomes solid.
- You’re done.
You can customize it:
You can add powdered milk or salt.
Here is the exciting part, invite your kids, friends or family to taste it together and enjoy. Mine, I plan to add it in my graham balls the next time I sell them. I still have cacao beans left and I am excited to make chocolate again.
