Dunkin Donut Choco Munchkins Inspired ingredients:

Cake Pop Ingredients:

• 3/4 cup All-Purpose Flour 
• 1/2 cup white granulated sugar
• 1/2 cup cocoa powder
• 1/2 tsp. baking powder

• 1 egg (large size)
• 8 tbsp. heavy or whipping cream
• 1/4 cup milk (use evap or powdered milk) *Note 1-read below
• 1/4 cup vegetable oil

Chocolate Glaze ingredients:

• 1 cup powdered sugar
• 1/4 cup cocoa powder
• 3-4 tbsp. milk (I used evap)

Butternut Toppings ingredients:

• 2 cups Dessicated coconut (fine)
• 1/4 cup Powdered sugar
• 6-7 tbsp. melted butter
• 2 drops bright orange food coloring *Note 2

How to make Chocolate Doughnuts:

1. Preheat oven to 375*F
2. Combine APF, sugar, cocoa powder, and baking soda in a mixing bowl. Set aside. (This is for Dry Ingredients)
3. In a another bowl, combine and mix the vanilla extract, egg, heavy cream, milk and oil altogether. (This is for wet ingredients)
4. Add the wet mixture into dry mixture. Mix until combined.
5. Spoon the batter to cake pop molder. Fill each half-sphere to the top.
6. Once done and filled, cover and securely close the molder.
7. Bake or steam for 10-15 minutes (375 *F ) or until its cooked.
8. After, cool down and set aside.

How to make Chocolate Glaze:

1. Combine all the ingredients in another bowl. Mix until well combined and thick.

How to make Butternut Topping:

1. If you have desiccated coconut that’s not fine as mine. Place desiccated coconut to a mincer/grinder or processor to make it fine.
2. Now, combine fine desiccated coconut, melted butter and powdered sugar then mix well.
3. Add 1-2 drops of food coloring then mix until orange color comes out.
4. Let it dry for 10 minutes or so.
5. Set aside.

I grew up seeing the way how Filipino made a Bean Paste which is usually made up of Condensed milk to make it sweeter instead of sugar, the condensed milk gives a creamier & sweet taste and it taste really good but, because of our weather I decided not to use condensed milk this time.

In our weather (Philippines), we have this really weird weather. Sometimes, it gets cold and hot. So, we tend to adjust some of our food (good example is our Adobo and this recipe for dessert) to make it last longer without wasting it.

As far as I know any kind of food that contains milk can easily be spoiled not unless if you have the refrigerator which probably a lot of people nowadays have their own ref so it’s fine. Replace sugar to condensed milk if you prefer it.

In this recipe, I make this filling with sugar, glutinous rice flour that serves as thickener, then add salt to balance the sweetness and Kidney Beans. You can use any kind of beans you want if this is not available. All types of beans taste the same for me.

Sweet Potato can be used as well with the same ingredients here in this recipe, I tried it here and it surprisingly tastes really good which is a best filling for Buchi or Hopia.



And for sweetener, you can substitute sugar to honey but you have to adjust it according to the level of your sweet taste preference.

This Bean Paste Filling can be used as filling for Mooncakes, Hopia, Bread, Cupcake, Palitaw, Buchi (Sesame Balls), Siopao (Steamed Buns) and many more. Well, it is up to you how adventurous or creative you are :)

I do not have Pressure cooker but if you have one, the better. Since I don’t have one, I just soak this overnight, boil then manually mashed it with my strainer but luckily I was able to borrow a blender.

The blender I used in the video is from my mother’s co-teacher. Unfortunately, my blender isn’t functioning well. Thanks to her co-teacher hahahaha. My mother gave them some of the food that I made few days ago in return for letting me borrow their blender for one week (hahahaha).



So, here is the very simple recipe of our homemade kidney bean paste. I hope you try this too.

Tools needed for making this:

Pot
Non-stick pan
Blender or strainer (do it manually by straining the boiled beans)

Kutsinta is a Filipino Native Delicacy that uses lye water. Kutsinta is usually made of Rice Flour, sugar, water and lye water, but this time we used Cassava powder. This is best served with shredded coconut or you can use cheese if you like something different. I, sometimes use chocolate syrup to dip it.

Anne's Dessert: Creamy and Tasty Leche Flan

• Bowl
• wire whisk
• Strainer
• Cheese cloth (optional)
• Egg white and yolk separator (optional)
• Aluminum foil for covering the flan
• Llanera / anything like thin that is used for baking cakes just make sure that it is small
• Toothpick/table knife/fork (optional)
• Steamer

1. 5 egg yolks
2. 1 pc. 200g condensed milk (big)
3. 1 pack Nestle Cream/Heavy Cream
4. 1/4 c. sugar
5. 1 drop vanilla flavor (I don’t have essence at home so I used the vanilla flavor instead)
6. 1 1/2 tbsp. water
7. 6 c. water for steaming

• In your Llanera, add water and sugar
• Then melt it over low heat until color changes to orange and do not burn it.
• When sugar is already melted, spread it evenly to the Llanera - side by side and bottom as well.
• Set aside and wait for caramelized sugar to be hardened.

How to make caramelized sugar for Leche Flan

• In a bowl, beat 5 egg yolks, do not over stir it to prevent bubbles.

Beating the egg yolk

• 
  Then add condensed milk, mix well

Adding the condensed milk to yolks

Adding essence or flavor to the flan

• Add Nestle and stir well. 
• mix altogether.

Adding the cream

• Get your Llanera with the caramelized sugar on it and place a strainer before pouring flan mixture into it.

Pour the mixture to Llanera

• Cover it with aluminum foil.
• Steam it for 30-35 minutes.

Steam for 30-35 minutes

• It is cooked already if it looks like jelly or insert a fork or toothpick to the flan and if it comes out clean then its already cooked.
• After the steaming process, if you are going to eat this right away, give it a little shake to loosen the cooked flan to llanera
• Then flip it upside down using plate then remove it from llanera.

• There you have it, this is now our Creamy and Tasty Leche Flan.
• If there is still flan left you just put it in the fridge.

Note:Strainer and cheesecloth will help your flan to make it smooth and less bubbles
It’s okay not to put it in the fridge right away, we’re just keeping it in the frigde so it will last long and it helps to make the flan to become solid.

• 1 tsp vanilla flavor (optional)
• 1 1/4 cup condensed milk
• 200 g Graham crackers
• 7 banana lakatan
• marshmallows

1. Combine all the ingredients except Graham crackers
2. Mix them well and set aside
3. Make a graham crumbs by crushing it. I used my wooden rolling pin to break the crackers.
4. Prepare a container and then pour some graham crumbs into it, make sure the bottom part is well covered.
5. Set aside.
6. Cut banana lakatan into crosswise/lengthwise.
7. Then place it under the graham crumbs as your second layer. Fill that in.
8. Add the marshmallows on top of your banana as your third layer.
9. Lastly, add our condensed-cream mixture. Cover marshmallows with our mixture.
10. Repeat the same process: First layer - crumbs, Second layer - banana, Third layer - Marshmallows and then Fourth layer - condensed-cream mixture.
11. After that, chill in the freezer overnight or until it sets.

How to make homemade Chocolate bar from Cacao Beans?

So, you love chocolate too? Yes of course, everyone loves it. So today I am going to share what I’ve done 1 week ago. This is made from the cacao beans that I got from someone for free. I’m so lucky to have cacao beans because I really wanted to make my own chocolate.

How to make homemade Chocolate bar from Cacao Beans?

So today I’m going to make chocolate bar, only three or four ingredients are needed to make it. And of course, patience is needed too. I admit this is hard to make because I don’t have the equipments that I needed. It took me 1 week to finish this chocolate bars but I’m desperate to make some since I don’t like to waste my cacao beans.

I got this recipe from the site of instructable by itsallaroundyou(credits to itsallaroundyou). You should read her/his post because I found this recipe very interesting and easy to follow. I won’t give you the exact measurement of the recipe coz I just followed based on my taste and I improved my chocolate according to my taste. And everything you read now is adjusted.

If you are going to make your own chocolate bars from cacao beans make sure you taste it to suit your taste. So here are the ingredients and materials needed.

Ingredients:

• Sugar
• Cacao beans
• Coconut oil
• Salt (optional)

Tools needed:

• Coffee Grinder or Food Processor (I used Blender & grinder for biscuits)
• Cooking pan (for roasting)
• Oven (Optional)
• Bowls
• Spatula
• Spoon
• Blower or Fan (optional)
• Rolling pin or mortar
• Tray/candy molder

I did not include the other tools that are listed from the site coz I adjusted it according to the things that I already have at home.

According to itsallaroundyou:
If you want your chocolate to be 70% dark chocolate, take the weight of the cocoa liquor (grams) and divide the number by 70. Take the result number and multiply that by 30 (this is the grams of sugar).

From Cacao Beans to Chocolate

I didn’t follow the 70% of dark chocolate and I made my own chocolate based on the consistency and taste.

Here is how:

1. Roast the cacao beans until you smell the aroma (to my experience, it smells like raw coffee) approximately 30 minutes. Continue roasting cacao beans, see the photo above.
2. Let it cool and peel the shell of cacao beans or if you have a blower use it to remove those shells.
3. After removing the shells then crack them. Bring it to your grinder. You should pulverize it to have a smooth and a perfect consistency.
4. Pulverize sugar using the grinder.
5. Now, add coconut oil and blend it using a blender.
6. Then add powdered sugar until it becomes smooth and a little bit thick (make sure that there are no lumps).
7. Now, pour it in your favorite candy molder or a tray like what I did. Then draw a line to make it easier for you to cut it after.
8. Place it in the fridge until it becomes solid.
9. You’re done.

You can customize it:
You can add powdered milk or salt.

Here is the exciting part, invite your kids, friends or family to taste it together and enjoy. Mine, I plan to add it in my graham balls the next time I sell them. I still have cacao beans left and I am excited to make chocolate again.

Snowballs recipe

Yesterday, I made my own version of Snowballs. At first, I thought this dessert is something similar to Graham Balls but the ingredients are different, really different. It tastes creamy gelatin that has crushed pineapple and coated with ground peanuts.


We have cashew nuts here in our town but unfortunately I don’t have available at home and since I already have peanuts then I had used it instead (peanut is very easy to find). I got this recipe from a friend of mine and she shared this to me since this isn’t too sweet to eat  (I saw this recipe too at Del Monte website but the instructions are different).



Here are the ingredients needed to make this. I hope you have free time to try this recipe too because it is delicious, not too sweet and perfect for those who aren’t sweet tooth like me.

Ingredients:

• 1 can crushed pineapple (medium & drained)
• 250 g marshmallow
• 1 pack All-Purpose Cream (chilled)
• 2 tbsp sugar
• 1 tbsp unflavored powder gelatin
• 1/4 cup water
• 1/4 toasted cashew nuts/peanuts
• Paper cups (optional)

Materials:
Spoon, ice cream scoop or any round shape spoon

What to do with the ingredients:
If you have cashew nuts available, you need to grind it for the coating or if you don’t have cashew nuts then Peanuts can also be used.

Here is how to make it:

1. Get 1 tbsp of powdered gelatin and dissolve it with water. Mix it well and set aside.
2. Combine marshmallow and pineapple then mix. Leave it for 1 hour to soften the marshmallow then set aside.
3. After 1 hour, mix sugar & dissolved gelatin to pineapple-marshmallow mixture.
4. Cook it to a low-medium heat in a pot
5. Stir continuously to avoid stickiness at the bottom of the pot
6. And add all-purpose cream and stir it until marshmallows and cream are dissolved.
7. After cooking: Transfer it to a container and let it be cooled, cover and refrigerate it overnight.
8. Scoop a small round snowballs using a spoon or ice cream scoop
9. Dip it to a ground cashew nuts/peanuts.

Coating (optional):
You can use other coatings aside from the ground peanuts like chocolate powder, powdered milk, sprinkles or any other coatings you like.

I tried the powdered milk and it tastes good to me.

Anyway, the gelatin should be in powder and not the one that has flavor so it should not have flavor.

Simple Graham Balls & Hearts
