Since buying this is a little bit expensive and if I make it myself, I can save a little from buying it. There is one thing that I am sure about roasted chicken is to marinate it overnight so it will become juicy and tasty on the inside. Marination is the secret method when you want your meat to be juicy or tasty.
The longer it marinates, the better it is.

Just like this recipe today, I made a very simple Roasted Chicken without using an Oven. We don’t have an oven at home so this is basically an improvised oven. You can also watch how I did it, I bake it with it. Technically for those who had an Oven, there is temperature given, but in this method, you can only adjust it to medium just to be safe, let’s stick in medium fire.
What we will need:
- 1 whole chicken
- lemongrass - Get 1 stalk lemongrass to tie a chicken leg and the rest for putting it in the chicken’s body
- 1 whole onion
- ground black pepper
mixture for marination:
- 12 pc. calamansi juice
- 2 tbsp. soy sauce
- 2 1/2 tbsp. sugar
- 4 tbsp. oyster sauce
- 4 tbsp. Sprite/7up/Royal
Improvised oven:
- 2 cups of salt
- Pot
Step 1 & 2: Combine the juice of calamansi, ground black pepper, salt, soy sauce, sugar, soy sauce and oyster sauce (this will serve as our marination solution sauce)
Step 3: Mix and stir well.
Step 4 & 5: Put the lemongrass inside the chicken’s body and whole onion.

Step 6, 7 & 8: Pour the solution sauce into the chicken and make sure to also add in the skin.
Step 9 & 10: Drissle ground black pepper, cover and marinate for 3 hours.
Step 11: Tie the chicken legs using lemongrass.

Step 12. 13 &14: Pour sprite then marinates for another 6 hours/overnight.
Step 15, 16 & 17: In your pot, put the salt and spread evenly until it becomes flat.

Step 18 & 19: After marinating the chicken, transfer it to a round baking pan and pour the marinated sauce.
Step 20, 21 & 22: Then transfer the baking pan with chicken in it in the pot and roast it for 20-30 minutes or until chicken is tender.

Note: If you don’t want your roasted chicken to be oily, you can remove the skin before marinating and roasting it. It might be a little bit oily.
