Fish ball is one of the Filipino street food signature that only in Asia have different sauce to dip in. There are different types of sauce that suit your taste. In the Philippines, it is usually sold in a wooden cart in the street and sells it every 3 in the afternoon or sometimes anytime of the day.
This is one of the most affordable street food that every one can buy even students from their grade school to college. I am guilty about this, I and my college friends used to eat fish ball whenever there is a time for us to go outside, imagine the price is very cheap at Php 1.00 per piece of fish ball (this is when I was in college so, I am not aware how much it is now).
Fish ball is not complete without the blockbuster sauce made by Manong vendor - Manong is an Ilocano word which translates to brother and kuya in Tagalog, sometimes you address someone Manong as a sign of respect especially if you don’t know the name of the vendor.

Again, the sauce have different kinds that you can choose from such as sweet, sweet spicy, vinegar and so forth and so on. Admit it, every one of us wants to make our own sauce like Manong’s sauce as close as possible in our home.
It can also be partnered with kikiam, squid ball, kwek-kwek (quail egg), hotdog and fried isaw.

Ingredients:
- 2 tbsps. flour
- 2 tbsps. cornstarch
- 2/3 cup brown sugar
- 5 tbsps. soy sauce
- 4 cups water
- 1 or 2 tbsps. sprite/7up or Royal
- 1 or 2 pieces of chili (minced)
- 1 red onion (minced)
- 2 cloves garlic (minced)
Material/s needed:
- Whire wisk
- bowl
- Glass or Plastic long jar
How to cook this:
- Combine all the ingredients: flour, cornstarch, brown sugar, soy sauce, water and sprite to a bowl. - Make sure to dissolve everything in water before cooking it.
- Then place it in medium heat
- Add the chili, garlic and onion while stirring it
- Continuously stir to avoid lumps.
- Cook until it becomes thick.
Adjustment:
- If the sauce is not thick (watery) as the way you want it to be then add a little bit of cornstarch and 1 tbsp of water and dissolve it. Add it to the sauce while stove is off.
- If you don’t want spicy just don’t add chili before you cook it.
- If you can’t find Sprite or Royal wherever you are, you should find the closest or similar taste of soda to sprite/royal.
Last tip: Add 1 tbsp fish sauce, 1 tsp of vinegar and adjust it.
We’re done cooking. Now, you have your own fish ball sauce at home. You only need fish balls, kikiam and etc to make it feel like you are eating it outside.
