How to cook Shrimp Paste with Green Mango

This is one the popular street foods in the Philippines.
Shrimp Paste with Green Mango (Manggang Hilaw with Alamang)
Alamang is the best partner of Kare-Kare, Pinakbet, unripe mango and many other delicious Filipino dishes.  It has a bit of fishy smell and if you are new you may not endure the smell.


But, for many Filipinos we love Alamang. Anyway, Alamang means Shrimp sauce or Shrimp paste but it's not as sticky as other paste products. It's is like watery. See the picture below. That is how it looks like.

You know what is the best partner for this recipe? Well no other than Unripe mango.

It is so popular as one of the street foods in the Philippines. Today, I cooked Alamang sauce with Unripe Mango. You can choose in any slice of mango, it's up to you.

So, here are the ingredients below:
Shrimp Paste (Alamang)
Garlic (minced)
Cooking Oil (you can use any type of oil, I just use vegetable oil here)
Sugar (brown or white will do)
Vinegar
Chili (Optional)

Cooking Procedure:
1. Heat the pan
2. Saute Garlic
3. Add Shrimp Paste (Alamang), cook a little.
4. Add Vinegar then stir.
5. Add Sugar and stir until Shrimp is cooked and becomes brown or maroon in color.
6. Taste and add sugar/vinegar if it is needed.
7. Add Chili if you like.
8. Serve it with unripe Mango.

Note:
The result of the recipe would be not watery, oily and too sticky but it should be okay like you see in my video and picture.

You just have to adjust by adding vinegar if it is too sticky and if it is salty then add a little bit of sugar.
Then you will see the red, brown or maroon color after you have cooked it. That’s it. We’re done!
