In the Philippines this soup is perfect during rainy season and cold season and even if it is not rainy or cold season people used to eat this as their breakfast and a merienda before or after work.
There are different versions of this soup in every region in the Philippines like Tagalog soup and such. Even though there are different versions of this, the common taste of this is creamy. It has evaporated milk and the other version uses cream.
The other version like Tagalog soup doesn’t use milk. But I am raised with the creamy version and this has always been my favorite ever since I was young until today.
In my version of this soup I did not include cream because it has already evaporated milk. I want it to become simple and since my family likes this a lot especially my father. He loves my version so much (thanks to him).
In terms of the elbow macaroni I have my own way of cooking it to save gas instead of directly cooking it in boiling water. But before that see my video below:
What are the ingredients you need:
- 3 cups elbow macaroni
- 4 tbsp margarine/butter
- 1 chicken breast
- 1/2 cup ground pork
- 1 tsp salt
- 3 cloves garlic
- 1 cup evaporated milk
- 1 onion
- 3 cups chicken broth
- 1/2 tsp ground pepper
- 1 carrots
- 1 cup cabbage
- Elbow Macaroni - soak it to 3 cups of water in 5-10 minutes after 10 minutes, drain the water and set aside Macaroni.
- Chicken Breast - get the pan and add water, salt, pepper and chicken then boil, let it cool then set aside the broth because you are going to use that later. After cooling down shred it and remove the bone.
- garlic - mince garlic
- onion - slice it into thin
- carrots - slice it into small pieces
- cabbage - slice it into small pieces
- Prepare a Pot and heat it in medium fire then melt margarine or butter and then add a little of cooking oil
- Saute garlic, onion and pork until it is cooked.
- Then add the shredded chicken breast and cook
- Add a little of fish sauce and then cook again
- Then add chicken broth then cover and simmer
- Add carrots, elbow macaroni and cabbage
- Cover and Simmer for 2 minutes
- Season with salt and pepper
- Add Evaporated milk then cover and simmer again
- Done! Serve it hot with calamansi and hard boiled egg.
