Chicken Tinola

This is an authentic Filipino dish in the Philippines.
Chicken Tinola
Tinola basically contains Papaya fruit, ginger and Chicken meat. This is also perfect during rainy/cold season to eat and lessen the cold weather even if it is not raining. Filipinos eat Tinola whenever they want because it is easy to cook.


I don’t know how to translate Tinola in english so you can understand or relate to what I am talking about.

I think there is no exact translation of it but the nearest english words I know Tinola is cooked with boiled chicken, papaya and water.

If you happen to know, please tell me so I can correct this post (thanks in advance).

This recipe is one the most favorite of the Filipinos for lunch and dinner. Especially if you like soup, you might want to taste this mouthwatering dish.

Like I’ve said earlier, this is perfect during the cold season or if you’re lucky enough to have a snow season in your country, you must try this soup. I think you’ll appreciate it.

The good thing about this recipe is that anyone in the world can cook this because all the ingredients can be found in your grocery wherever you are. Hopefully,  in terms of chicken, we’ve already tried duck and it really taste good than the regular chicken.

So, duck, wild duck can also be used, so with turkey. I’m not sure of other kinds of meat but those three I have mentioned are good to substitute if you don’t have available chicken. Below are the ingredients needed.

Ingredients:

  • 4 cups water or washed water of rice
  • 1/2 kg chicken (cut into serving pieces)
  • 2 cups papaya wedges
  • 1 tbsp sliced ginger
  • 1 tsp garlic
  • 1 dried laurel leaf (optional)
  • 1 cup chili pepper leaves
  • 1/2 cup sliced onions
  • 1 tbsp cooking oil
  • fish sauce
  • salt
  • whole corn pepper

Optional ingredients:
  1. Dried laurel leaf or bay leaf - is optional, if there is no laurel leaf available. It’s okay because we just use it for aroma.
  2. Washed water of rice - What if  you do not have washed rice water available? Regular water is enough. The reason why we used washed water of rice is that it adds delicious taste to our Tinola soup. It’s tastier than regular water.
If there is available rice
  • Wash the rice and get the second washed water. Put washed water in a bowl/pitcher then set aside. You will use the second washed rice water.
Now that we have everything we need for this recipe.

Here is how to cook this:
  1. Heat oil and saute garlic and ginger until they become brown.
  2. Add chicken, cook and cover
  3. then add onion, dried laurel leaf and Papaya
  4. Then carefully pour water/washed rice water
  5. Simmer and cover until papaya is cooked.
  6. Season with salt, fish sauce and pepper corn.
  7. Turn off the heat and add chili pepper leaves.
  8. Serve it hot.
If you like to add spicy, you can add chili pepper if it is necessary or it depends on your taste.
