Ingredients:

  • 3 cups chicken stock
  • 2 cups cubed potatoes
  • 2 tsp salt
  • 1 onion (sliced thinly)
  • 1/8 tsp ground black pepper
  • 1 can cream style corn
  • 1 tsp fresh or dried parsley (optional)
  • 1 cup milk or evaporated milk
  • 1 tsp spring onion (optional)

Directions:
  1. In a casserole, boil chicken stock in a medium heat.
  2. Add the sliced onion and potatoes.
  3. Simmer for 2 minutes
  4. Add the cream corn style, stir
  5. Season with salt and pepper according to your taste
  6. Simmer again until potatoes are cooked and stir until it becomes slightly thicken.
  7. Turn off the stove and serve while hot
  8. Sprinkle with parsley and spring onion.
