Annatto Fried Rice with garlic (Sinangag na Kanin sa Atsuete)
Fried rice (Tagalog: Sinangag na Kanin) is one of my favorite to cook because it is so easy. Our left over rice can be eaten as if it is still new or fresh. Usually most Filipinos eat fried rice every breakfast but these days, it can be eaten anytime of the day as long as you have left over rice and sometimes you can just eat it alone.
A lot of people from outside the Philippines thought it's Java Rice of Indonesia if I am not mistaken but we also have our own Fried Rice. We have different types of fried rice, garlic fried rice is the known one and many more.
Today, let's make Annatto Fried Rice from our left over rice. I used seeds instead of using annatto powder, it is tastier, aromatic and color is natural, so I prefer seeds but if ever it isn't available. You can definitely use annatto powder.
Annatto powder can possibly be bought at an Asian Store or to be sure, try it in an Indian store. They have everything when it comes to spices and herbs.
By the way, I used white rice (no cetain kind of rice) just as long as it is white but if you're health conscious, you can use long grain rice.
NOTE:
If you don't have left-over rice, you can cook rice and let it cool for 1-2 hours. Once done, break rice to separate grains. That's it.Royal Braised Chicken (Soda Chicken) |

[ INGREDIENTS: ] Annatto Fried Rice with garlic (Yellow Rice)
- 5 cups Left-over rice or cold cooked white rice
- 1 whole (small and slice thinly) onion
- 2 cloves (peeled and minced) garlic
- 2 tbsp. cooking oil
- 1 tsp. annatto seeds (atsuete)
- salt and ground black pepper (to taste)
- black sesame seeds is optional and for display only

STEP 1: MAKE ANNATTO OIL

- Heat oil in a pan and cook sesame seeds over low-medium heat. Once oil has become orange in color. Remove the seeds to the pan.
STEP 2: COOKING ANNATTO FRIED RICE

- Saute garlic until brown then get a small amount of fried garlic for toppings later.
- Then add onion (low-medium heat). Wait until onions are translucent already or caramelized.
- Next is cook left-over rice until rice is fully coated with annatto oil. (medium heat)
- Stir while cooking in low-medium heat.
- Lastly, add salt and pepper. Adjust according to your taste.
- Cook it in 4-5 minutes.
